For a single serving:
Ingredients, organic preferred
4 oz or more cooked chicken, chopped
1 stalk of celery, diced
1 firm apple (Honeycrisp) diced
1 tablespoon toasted walnuts
1-2 Tbs plain Greek yogurt
1/8 tsp cinnamon
Directions:
Mix all ingredients gently in a bowl, serve cold on a bed of your favorite lettuces and enjoy.
